Denver Muffins - cooking recipe

Ingredients
    1 (8 oz.) pkg. pitted dates, chopped
    3/4 c. water
    1/4 c. Mazola corn oil
    1/2 tsp. vanilla
    1 c. whole wheat flour
    1/2 c. sugar
    1/3 c. coarsely chopped walnuts
    1/2 tsp. baking soda
Preparation
    Boil water.
    Add dates until softened.
    Add oil.
    In a separate bowl, mix dry ingredients in bowl.
    Add the dry mixture to the date mixture.
    Mix well, then add vanilla.
    In muffin tins with baking cups, fill with batter 2/3 full.
    Bake at 375\u00b0 for 25 minutes.
    May be frozen.
