South-Of-The-Border Squash - cooking recipe

Ingredients
    1 lb. yellow squash (about 4)
    1 medium onion, chopped
    1/2 tsp. salt
    1/2 c. water
    1 (4 oz.) can chopped green chilies (undrained)
    1 (2 oz.) jar chopped pimento, drained
    1 c. Monterey Jack cheese
    2 hard-cooked eggs, sliced
    1/2 c. corn chips, crushed
Preparation
    Cut
    squash
    into 1/4-inch slices.
    Combine the first 4 ingredients in
    saucepan;
    cook 6 to 8 minutes or until squash is tender.
    Drain
    well.
    Add\tchilies,
    pimento
    and cheese. Spoon into a lightly greased 1 3/4 quart casserole.
    Place egg slices on top
    and sprinkle corn chips over egg slices.
    Bake at 350\u00b0 for 20 minutes or until thoroughly heated.
