Grace Marmalade Pudding - cooking recipe

Ingredients
    4 Tbsp. Grace Seville orange marmalade
    2 Tbsp. (1 oz.) butter or margarine
    2 c. (1 pt.) milk
    3 Tbsp. (1 oz.) sugar
    1/2 pt. breadcrumbs
    3 eggs
    1/2 c. plus 1 Tbsp. sugar (4 oz.)
Preparation
    Butter a 2-quart pie dish; cover the bottom of the dish with a layer of marmalade.
    Heat together the butter, milk and 2 teaspoons of sugar.
    Add the breadcrumbs; leave to stand for 10 minutes.
    Beat together 1 whole egg and 2 egg yolks; stir well into the breadcrumb mixture.
    Pour 1/2 of the breadcrumb mixture into the dish.
    Add another layer of Grace Seville orange marmalade.
    Bake in moderate oven at 350\u00b0 until mixture is set. Whip egg whites stiffly; fold in the last quantity of sugar.
    Bake in a very cool oven (290\u00b0) for approximately 20 to 30 minutes, until the meringue is brown and crisp.
    Serves 6.
