Eggplant Salad (Salata Melitzanas)(Greek) - cooking recipe
Ingredients

1 large eggplant
1 small onion, chopped
salt and pepper
1/2 c. olive oil
1 1/2 Tbsp. vinegar
parsley, chopped
tomato wedges
black olives
Preparation

Bake eggplant in
a 350\u00b0 oven for 1 hour or until soft. Remove skin and chop flesh.
In a bowl, combine eggplant, onion, salt, pepper, olive oil and vinegar.
Garnish with chopped parsley, tomato wedges and olives.
Oven temperature: 350\u00b0. Preparation time:
1 hour and 15 minutes.
Cooking time:
1 hour.
