Fat-Free Potato Burritos - cooking recipe
Ingredients

6 c. chunky enchilada sauce
12 whole wheat tortillas or 12 to 14 soft corn tortillas
3 c. mashed potatoes
1 c. chopped scallion
1 c. frozen corn kernels, thawed
1 (4 oz.) can chopped green chilies
Preparation

Preheat oven to 350\u00b0.
Spread one cup of the sauce over the bottom of a casserole dish.
Spread a line of potatoes down the center of each tortilla.
Sprinkle on some scallion, corn and green chilies.
Roll up and place, seam side down, in the casserole.
Repeat until all of the ingredients are used.
Pour the remaining sauce over the tortillas.
Cover and bake for 30 minutes, or until sauce is bubbly.
