Rollini Di Vitella, Polla(Veal Or Chicken Rollettes) - cooking recipe

Ingredients
    2 lb. rump of veal or 2 lb. chicken breasts, boned
    4 oz. Prosciutto (Italian ham), chopped
    olive oil
    2 cloves chopped garlic
    1 large sliced onion
    2 Tbsp. chopped parsley
    2 c. canned tomatoes
    1 Tbsp. basil
    2 Tbsp. picorino cheese
    salt and pepper to taste
Preparation
    Slice veal or chicken very thin.
    Cut in 4 to 5-inch squares. Mix garlic, parsley, basil, salt, cheese and ham.
    Place heaping teaspoon of mixture and slice of onion on each square.
    Roll and tie with a string or toothpicks very carefully.
