Cranberry Nut Bread - cooking recipe

1 c. chopped fresh or frozen cranberries
3/4 c. chopped walnuts
1 Tbsp. grated orange peel
2 c. all-purpose flour
1 c. sugar
1 1/2 tsp. baking powder
1 tsp. salt
1/2 tsp. baking soda
1 Tbsp. shortening
3/4 c. orange juice
1 egg, beaten well
Preparation

Preheat oven to 350\u00b0. Liberally grease and lightly flour 9 x 5 x 3-inch loaf pan. Individually prepare cranberries, nuts and orange peel for use. Set aside. Mix flour, sugar, baking powder, baking soda and salt (optional) together in a bowl. Cut in shortening. Stir in orange juice, egg and orange peel, mixing just enough to moisten. Fold in cranberries and nuts. Spoon mixture into prepared pan. Bake 60 minutes or until wooden pick inserted in center comes out clean. Cool on rack for 15 minutes. Remove loaf from pan and cool completely before cutting.
