Zucchini Bread - cooking recipe
Ingredients

2 eggs, well beaten
1 c. sugar
3/4 c. oil
1 1/2 c. chopped or grated zucchini
1/2 c. chopped walnuts (optional)
1 1/2 c. flour
3/4 tsp. cinnamon
3/4 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1/2 tsp. allspice
1 tsp. vanilla
Preparation

Preheat oven to 350\u00b0.
To eggs add sugar and beat until fluffy.
Blend in oil.
Add zucchini and nuts.
Sift all remaining dry ingredients.
Add to zucchini mixture.
Blend well.
Pour into greased loaf pan or two (1-pound) coffee cans, well-greased. Sprinkle cinnamon-sugar on top (optional).
Bake 55 to 60 minutes.
Cool in pan(s), then turn onto rack.
Cool completely. Wrap in lightweight foil.
Store in refrigerator or store in freezer.
