Lentil Stew - cooking recipe

Ingredients
    1 lb. lentils
    2 carrots, chopped
    1 large onion, chopped
    2 ribs celery, chopped
    1 garlic clove, minced
    1 (6 oz.) can tomato paste
    1 Tbsp. red wine vinegar
    1 bay leaf
    2 tsp. salt or salt substitute
    1/4 tsp. black pepper
    8 c. water
Preparation
    Rinse lentils.
    Pour lentils into deep pot; add all other ingredients and water.
    Bring to a boil.
    Cover; simmer until lentils are cooked, about 1 1/2 hours.
    Season to taste.
    Serve with salad and crusty bread.
    Makes 8 servings.
