Curried Crab Soup - cooking recipe

Ingredients
    4 Tbsp. butter
    1/2 c. finely chopped onion
    1 clove garlic, minced
    1/2 c. peeled, diced apple
    1 Tbsp. curry powder
    3 Tbsp. flour
    1/3 c. peeled, chopped tomato
    3 c. chicken broth
    1/2 lb. backfin crab meat
    1/2 c. heavy cream
    salt, pepper and Tabasco to taste
    chopped parsley
Preparation
    Melt butter in large pot; add onion and cook until wilted. Add garlic and apple. Stir, sprinkle with curry powder and flour. Add tomato and broth, stirring rapidly with whisk. When thick and smooth add salt and pepper to taste. Add crabmeat. Simmer 10 minutes. Add cream. Bring to a boil. Add shakes of Tabasco. Garnish with chopped parsley. Serves 6-8.
