Eggplant Casserole - cooking recipe

Ingredients
    1 large eggplant, peeled and cubed
    1 stick margarine
    1 egg
    1 green pepper, chopped
    1 medium onion, chopped
    1 c. grated cheese
    cracker crumbs
Preparation
    Boil the eggplant in salt water with onion and green pepper. Mash and drain. Add egg and melted butter.
    Layer eggplant mixture, cracker crumbs and cheese in casserole dish. Top with more cracker crumbs and cheese. Bake at 350\u00b0 for 20 minutes.
