Cheese And Onion Potatoes - cooking recipe

Ingredients
    1/4 c. Parkay
    4 medium unpeeled red potatoes, sliced 1/4 inch thick
    2 Tbsp. dried minced onion
    pepper to taste
    1/3 c. shredded Cheddar cheese
    chopped fresh parsley
Preparation
    In a skillet, melt Parkay over medium heat.
    Add potatoes, onions and pepper; toss to coat.
    Cover and cook, stirring occasionally, until tender, about 10 minutes.
    Uncover; cook until potatoes are browned, about 2 to 5 minutes.
    Top with cheese. Cover and remove from heat; let stand for few minutes.
    Sprinkle with parsley before serving.
    Yields 4 servings (good with steak).
