Helen Leatherwood'S Pear Relish - cooking recipe

Ingredients
    1 gal. pears
    1/2 gal. onions
    14 green peppers
    4 hot green peppers
    1 c. pimento
    2 c. salt
    2 qt. cider vinegar
    4 c. sugar
    4 Tbsp. turmeric
    4 Tbsp. whole mustard seed
    1 Tbsp. celery seed (optional)
    1 Tbsp. garlic powder (optional)
Preparation
    Put pears, onions, peppers and pimento through a grinder on medium setting.
    Sprinkle salt over the ground mixture.
    Soak overnight (no water).
    Next morning, pour all in a colander. Rinse all salt out. In a large container, put vinegar, sugar, turmeric and mustard seed.
    Bring to a boil and let boil 5 minutes.
    Add all ground ingredients, stirring constantly.
    Return to boil.
    Add celery seed and garlic powder, if desired.
    Let boil another 1/2 hour.
    Jar while hot and seal.
