Avocado Corn Salsa - cooking recipe
Ingredients

1 c. fresh corn kernels, cooked (or canned)
1/4 c. chopped red pepper
1/4 c. chopped yellow pepper
1/4 c. diced tomato
2 Tbsp. chopped cilantro
2 Tbsp. fresh lemon juice
1 Tbsp. finely chopped shallots
1/2 jalapeno chile, seeded and minced
1 c. diced, peeled avocado
Preparation

Toss together adding avocado last.
Cover and refrigerate. Make up to 8 hours in advance.
Serve with chips.
