Rice Stuffed Fish Fillets - cooking recipe

Ingredients
    1 pkg. rice/broccoli au gratin mix
    2 green onions, chopped
    4 flounder fillets
    1 Tbsp. dry seasoned bread crumbs
    2 tsp. butter, melted
Preparation
    In medium saucepan, combine 2 cups water, rice and sauce mix and green onions.
    Bring to a boil; reduce heat to medium-low and simmer 10 minutes, stirring occasionally.
    Heat oven broiler. Layer on fish fillet, smooth side up, on work surface.
    Spread 1/2 cup rice mixture over fillet and roll up starting at narrow end. Place roll in shallow baking dish, seam side down.
    Repeat with remaining fillets.
    Sprinkle bread crumbs evenly over fish rolls; drizzle with melted butter.
    Broil 5 to 6 inches from heat for 4 to 5 minutes.
    Serve with lemon wedges.
