Zucchini Frittata - cooking recipe
Ingredients

1/4 c. oil
1 c. thinly sliced white onion
3 c. chopped, unpeeled zucchini
1 tsp. minced fresh parsley
8 large eggs
1/2 c. grated Parmesan or Romano cheese
1/2 c. sharp Cheddar cheese, chopped
dash of pepper
Preparation

Heat oil over low heat.
Add zucchini, onion and parsley. Saute until soft about 5 minutes.
Remove from heat; set aside. Beat eggs in a large bowl with grated cheese and seasonings.
Add zucchini mixture and chopped Cheddar cheese; blend well.
Pour into lightly greased 9-inch square pan.
Bake at 350\u00b0 until just firm in the center.
Will take about 20 to 25 minutes.
Serves 6. Best if eaten hot out of the oven.
