Swedish Sill Salad - cooking recipe
Ingredients

2 c. diced, pared, cooked potatoes
2 c. diced cooked beef
2 c. dill pickles
1 c. diced pickled beets
2 c. dried herring in wine sauce
mayonnaise, if desired
1 hard-cooked egg
sliced beets, if desired
Preparation

In
large
bowl
combine potatoes, beef, pickles, diced beets and herring (with sauce).
Cover;
chill several hours. Just before
serving, add mayonnaise.
Toss until ingredients are moistened.
Garnish
with diced egg white, sieved egg yolk and sliced beets.
Makes 25 servings.
