Potato Mints - cooking recipe
Ingredients

1 small potato, freshly boiled and mashed
1/4 tsp. salt
2 1/2 c. confectioners sugar
oil of peppermint to taste
food coloring (if desired)
Preparation

These are delicious and easy to make and inexpensive.
Add salt and oil of peppermint to hot mashed potatoes.
Work in enough confectioners sugar to make a stiff dough that will hold its shape when made into balls with the fingers.
Place balls on wax paper to set.
These are creamy and good.
They keep well when stored. Other flavoring may be used in place of peppermint if desired.
