Cheddar Muffins - cooking recipe
Ingredients

1 3/4 c. all-purpose flour
1/2 c. shredded Cheddar cheese
1/4 c. sugar
2 tsp. baking powder
1/4 tsp. salt
1/4 tsp. ground red pepper
1 egg (beaten)
3/4 c. milk
1/3 c. oil
6 strips bacon, crisply fried, drained and crumbled
Preparation

Grease or spray muffin pan.
Stir together flour, cheese, sugar, baking powder, salt and pepper.
Make a well in center.
In a small bowl, combine egg milk and oil.
Add egg mixture to flour mixture.
Stir just until moistened.
Batter should be lumpy. Fold in crumbled bacon.
Fill prepared muffin pan cups.
Bake at 400\u00b0 for 20 to 25 minutes, until golden.
Remove from pan.
Serve while warm.
