13 Bean Soup(Serves 8) - cooking recipe

Ingredients
    2 c. mixed beans (13 different types)
    water
    2 Tbsp. salt
    2 qt. fresh water
    ham or ham hock
    1 large onion, chopped
    1 (16 oz.) can tomatoes, chopped
    1 of the following three: 1 pod red pepper, 1 tsp. chili powder or 1 small can green chopped chilies
    juice of 1 lemon
    salt and pepper to taste
Preparation
    Rinse and sort beans before cooking.
    Cover beans with water. Add 2 tablespoons salt.
    Soak overnight and drain.
    Add 2 quarts fresh water and ham or ham hock.
    Bring to a boil, simmer 3 hours. Add onion and tomatoes.
    Add one of the following three: pod of red pepper, chili powder or green chopped chilies.
    Add juice of lemon.
    Salt and pepper to taste.
    Simmer another 30 minutes or 1 hour.
    Flavor improves with age.
