Oriental Chicken And Peanuts - cooking recipe

Ingredients
    1 to 1 1/2 lb. boneless chicken breasts, cut into small pieces
    1 egg white
    4 tsp. cornstarch
    2 Tbsp. soy sauce
    1/2 c. scallions, cut up
    4 Tbsp. oil
    1 tsp. sugar
    2 Tbsp. sherry
    red pepper, chopped
Preparation
    Marinate chicken with beaten egg white, 3 teaspoons cornstarch and 1 tablespoon soy sauce.
    Refrigerate several hours.
    Saute chicken in oil 3 to 4 minutes, until lightly browned.
    Blend in remaining ingredients, holding vegetables aside.
    Add vegetables and 1/2 cup peanuts, just to heat.
    Serve immediately over rice. Serves 4.
