Eggplant Maurice - cooking recipe

Ingredients
    1 small eggplant, cubed
    1 (1 lb.) can tomatoes, drained
    1 green pepper, chopped
    1 medium onion, sliced thin
    1/2 lb. Cheddar cheese, shredded
    1 Tbsp. sugar
    1 tsp. salt
    1/4 tsp. pepper
    1/2 tsp. garlic salt
Preparation
    Mix together sugar, salt, pepper and garlic salt.
    Set aside. Place a layer of eggplant in a greased casserole.
    Add a layer of tomatoes and some chopped green pepper and onion.
    Sprinkle lightly with the mixed seasonings.
    Add a layer of cheese.
    Repeat layers until casserole is filled, ending with cheese.
    There is great shrinkage, so force the cover down over the mixture.
    Cover and bake in a preheated 400\u00b0 oven for 20 minutes.
    Remove cover. Reduce heat to 350\u00b0 and continue baking for another 30 minutes. Serves 6.
