Danish Sesame Bran Bread - cooking recipe

1 c. boiling water
1 c. yellow cornmeal
2 1/2 to 3 c. all-purpose or unbleached flour
3 c. whole wheat flour
1/2 c. shreds of whole bran cereal
1/2 c. sesame seed, toasted
2 tsp. salt
2 pkg. active dry yeast
1 c. milk
1/4 c. oil
1/4 c. molasses
1/4 c. honey
1/2 c. yogurt (room temperature)
Preparation

In a small bowl, combine 1 cup boiling water and cornmeal. Lightly spoon flour into measuring cup; level off.
In a large bowl, combine 1 cup all-purpose flour, 1 cup whole wheat flour, cereal, sesame seed, salt and yeast; blend well.
In small saucepan, heat milk, oil, molasses and honey until very warm (120\u00b0 to 130\u00b0); mixture will curdle slightly.
Add warm liquid, cornmeal mixture and yogurt to flour mixture.
Blend at low speed until moistened; beat 3 minutes at medium speed.
Stir in 2 cups whole wheat flour and about 1/2 cup all-purpose flour until dough pulls cleanly away from sides of bowl.
