Quick Cherry Pie - cooking recipe

Ingredients
    1 pkg. (6 servings) vanilla pudding mix
    1/4 c. sugar
    1/4 tsp. salt
    1 c. water
    1 Tbsp. lemon juice
    1 can (16 oz.) pitted red sour cherries
    1 Tbsp. butter or margarine
    few drops red food coloring (optional)
    1 baked 9-inch pie shell, cooled
Preparation
    Combine pudding mix, sugar and salt in saucepan.
    Stir in water and lemon juice and blend well.
    Cook and stir over medium heat until mixture comes to a full boil.
    Remove from heat.
    Stir in butter and food coloring.
    Cool 5 minutes.
    Pour into pie shell.
    Let stand at least 4 hours or until set.
    Garnish with whipped topping if desired.
