Canadian Cheese Soup - cooking recipe

Ingredients
    1 c. grated carrot
    1 c. celery, chopped finely
    2 c. water
    4 Tbsp. onion, chopped
    1/2 c. butter or margarine
    3/4 c. flour
    4 c. milk
    4 c. chicken stock or bouillon
    1 lb. sharp cheese, diced (Old English)
Preparation
    Cook celery and carrot in boiling water until tender.
    Cook onion in butter until tender, but not brown.
    Stir in flour.
    Add milk and chicken broth; cook over low heat until thickened, stirring constantly.
    Add cheese; stir to blend.
    Stir in vegetables and water.
    Serve topped with chopped parsley.
