Zucchini Meat Loaf Italiano - cooking recipe
Ingredients

3 Tbsp. olive oil
2 medium zucchini, chopped (about 1 1/2 c.)
1 medium onion, chopped
2 or 3 cloves garlic, crushed
1 1/2 lb. ground beef
2 Tbsp. snipped fresh parsley
1 egg
3/4 c. grated Parmesan cheese
1 tsp. salt
1/2 tsp. pepper
4 skinless, boneless chicken breast halves, cubed
1 large green bell pepper, cut into 1 1/2-inch pieces
1 onion, cut into chunks
1 large red bell pepper, cut into 1/2-inch pieces
1 c. barbecue sauce
Preparation

Preheat an outdoor grill for high heat and lightly oil grate. Skewer chicken breast cubes, green bell pepper pieces, onion chunks and red bell pepper pieces alternately on long skewers. Place skewered chicken and vegetables on the prepared grill. Brush with barbecue sauce. Turning and brushing with barbecue sauce frequently, cook to desired doneness.
