Sweet Relish - cooking recipe

Ingredients
    4 c. onions, chopped
    4 c. green peppers, chopped
    4 c. green tomatoes, chopped
    2 red peppers, chopped
    1/2 c. kosher salt
    6 c. sugar
    2 Tbsp. mustard seed
    1 Tbsp. celery seeds
    1 1/2 tsp. turmeric
    4 c. cider vinegar or white vinegar
Preparation
    Place all vegetables in large pot.
    Sprinkle top with salt. Cover and let stay overnight.
    Place in colander to drain; pressing to remove all liquid.
    Place back in kettle.
    Add sugar, seasonings and vinegar.
    Mix and bring to boil.
    Lower heat and simmer 15 minutes.
    Pack into hot sterile jars.
    Do not use too much juice when packing.
    Vegetables can be chopped in food processor.
