Zucchini Appetizers - cooking recipe
Ingredients

3 c. grated zucchini, unpeeled
1/2 c. Parmesan cheese
1/2 tsp. salt
1/2 c. chopped onion
1/2 c. oil
dash of garlic
1 c. biscuit mix
2 Tbsp. parsley
1/2 tsp. pepper
1/2 tsp. oregano
4 eggs, slightly beaten
Preparation

Mix all ingredients together.
Spread in greased 9 x 13-inch pan.
Bake at 350\u00b0 until golden brown, about 25 minutes.
Let set for 2 to 3 minutes.
Cut into rectangles and serve.
May be made ahead and frozen.
This makes a nice casserole if poured into a buttered glass baking dish and baked at 350\u00b0 for 45 to 50 minutes until brown and firm.
