Ratatouille - cooking recipe

Ingredients
    1 small eggplant, peeled and cubed
    3 medium zucchini, cut into 1/2-inch slices
    2 large tomatoes, peeled and chopped
    1 large onion, sliced
    1 green pepper, cut into strips
    1/4 c. minced fresh parsley
    1 Tbsp. chopped basil
    1/2 tsp. salt
    1/4 tsp. pepper
    3 Tbsp. olive oil
Preparation
    Combine all ingredients in a large Dutch oven.
    Bring to a boil; cover, reduce heat and cook 15 minutes, stirring occasionally.
    Yield: 8 servings.
