Baked Yellow Squash With Fresh Tomatoes - cooking recipe

Ingredients
    2 lb. tender yellow squash
    3 medium tomatoes, peeled and sliced
    2 medium sweet onions, sliced paper thin
    1 1/2 to 2 tsp. salt
    2 tsp. dried or fresh oregano
    2 tsp. sage
    2 tsp. basil
    pepper to taste
    vegetable spray or cooking oil
Preparation
    Preheat oven to 350\u00b0.
    Spray or oil (sparsely) a deep 2-quart casserole.
    Wash and slice the squash.
    Place layer of squash in casserole.
    Add layer of tomatoes, then layer of onions.
    Sprinkle with 1/2 the herbs, salt and pepper.
    Repeat layers and seasonings.
    Cover and bake for 45 to 50 minutes.
