Golden Glow Salad - cooking recipe

Ingredients
    1 (3 oz.) pkg. sugar-free orange gelatin
    1 c. boiling water
    1 (8 oz.) can unsweetened crushed pineapple
    1 Tbsp. lemon juice
    cold water
    3/4 c. finely shredded carrots
Preparation
    In a bowl, dissolve gelatin in boiling water.
    Drain pineapple, reserving juice. Add lemon juice and enough cold water to pineapple juice to make 1 cup.
    Stir into gelatin.
    Chill until slightly set.
    Stir in pineapple and carrots.
    Pour into a 4-cup mold coated with nonstick cooking spray.
    Yield: 6 servings.
