Lemon Chicken - cooking recipe

Ingredients
    1 lb. boneless chicken breast
    1 medium onion, chopped
    2 garlic cloves, crushed
    2 Tbsp. margarine
    1 Tbsp. cornstarch
    1 can chicken broth
    1/2 tsp. lemon rind
    1 carrot, sliced thin
    2 Tbsp. lemon juice
    1/2 tsp. salt
    1 c. pea pods
    3 Tbsp. dried parsley
    2 c. instant rice (uncooked)
Preparation
    Saute chicken, onion, garlic and carrots in butter until chicken is browned (about 5 minutes).
    Stir in cornstarch and cook 1 minute.
    Add chicken broth, carrots, lemon juice, lemon rind and salt.
    Bring to boil.
    Stir in pea pods, parsley and rice; cover. Remove from heat and let stand 5 minutes.
    Fluff with fork.
