Ingredients

1/2 c. oleo
1 c. sugar
1 tsp. lemon flavoring
1 3/4 c. sifted flour
1 c. shredded coconut
1 egg
2 tsp. vanilla
3/4 tsp. salt
1/2 tsp. baking soda
Preparation

Cream the oleo.
Add sugar and cream until light and fluffy. Add egg and flavorings.
Gradually mix in dry sifted ingredients alternately with coconut.
Mold into rolls.
Wrap in waxed paper and refrigerate overnight.
Cut into 1/8 to 1/4-inch slices. Bake on ungreased cookie sheet in a moderately hot oven at 375\u00b0 for 10 minutes.
Makes 4 1/2 dozen.
