Scalloped Eggplant - cooking recipe

Ingredients
    2 Tbsp. chopped green pepper
    2 Tbsp. chopped onion
    1/4 c. melted butter
    1 medium eggplant, peeled and cubed
    2 c. chopped canned or cooked tomatoes
    1 tsp. salt
    pepper to taste
    3/4 c. bread cubes
Preparation
    Saute pepper, onion and butter.
    Add eggplant, tomatoes, salt and simmer, covered, for 10 minutes.
    Spoon into a lightly greased 2-quart casserole.
    Combine remaining butter with bread cubes and spoon over eggplant.
    Bake at 350\u00b0 for 20 minutes or until tender. Serves about 4.
