Chicken Pie With Sweet Potato Crust - cooking recipe

Ingredients
    2 c. diced or sliced cooked chicken
    1 (20 oz.) can small boiled onions, drained
    1/3 c. finely chopped parsley
    1 Tbsp. butter
    2 green peppers, sliced thin
    2 Tbsp. flour
    2 c. chicken broth
    1 tsp. grated lemon peel
    salt and pepper to taste
Preparation
    Put layer of chicken in a 2-quart casserole dish.
    Add a layer of green pepper and a layer of onions.
    Sprinkle generously with parsley.
    Repeat layers until all ingredients are used.
    Melt butter over moderate heat; blend in flour and add chicken broth slowly, stirring until sauce thickens and is smooth.
    Add lemon peel, salt and pepper; mix well.
    Pour over chicken mixture.
    Top with Sweet Potato Crust and bake at 350\u00b0 about 40 minutes.
