Manicotti - cooking recipe

Ingredients
    4 Tbsp. olive oil
    1 onion, chopped
    2 cloves garlic, minced
    1/2 c. parsley, chopped
    1 (28 oz.) can tomatoes
    1 (6 oz.) can tomato paste
    1 c. water
    1 tsp. salt
    1 tsp. basil
    1/4 tsp. pepper
    1 bay leaf
    1/2 lb. Mozzarella, grated
    2 lb. Ricotta cheese
    2 eggs, slightly beaten
    1/2 c. Parmesan, grated
    salt and pepper

Preparation
    In large saucepan, saute onions and garlic in oil.
    Add parsley, tomatoes, tomato paste and water.
    Stir well.
    Add salt, pepper, basil and bay leaf.
    Simmer for 45 minutes.
