Blueberry Muffins - cooking recipe

Ingredients
    2 c. all-purpose or whole wheat flour
    1/2 c. sugar
    3 tsp. baking powder
    1 tsp. grated lemon/orange peel
    1/2 tsp. salt
    1 egg
    1 c. fresh/canned blueberries, drained
    3/4 c. milk
    1/3 c. oil
Preparation
    Heat oven to 400\u00b0.
    Use paper liners in muffin pan.
    In medium bowl, combine flour, sugar, baking powder, salt and lemon peel; mix well.
    Stir in blueberries.
    In small bowl, combine milk, oil and egg; blend well.
    Add liquid ingredients to dry ingredients all at once; stir just until moistened.
    Fill muffin liners 2/3 full.
    Bake for 20 to 25 minutes or until light golden brown. Cool 1 minute.
    Remove from pan.
    Makes 12 muffins.
