Mississippi Rice With Chicken - cooking recipe

Ingredients
    1 (3 lb.) chicken
    1/2 envelope dry onion soup mix
    1 can condensed cream of mushroom soup
    2 Tbsp. chopped pimento
    3 c. cooked rice
    1/2 c. grated American cheese
Preparation
    Cook chicken in water until tender; remove from bones and cut into bite size pieces.
    Combine onion soup mix, mushroom soup and pimento.
    Alternate layers of rice, chicken and soup mix in a casserole, ending with mushroom soup mixture.
    Sprinkle with cheese.
    Bake at 375\u00b0 until cheese melts and cooks to a golden brown.
    Serves 6.
