Crabmeat Coquille - cooking recipe

Ingredients
    3 Tbsp. butter
    2 Tbsp. chopped onions
    1 1/2 lb. crabmeat (imitation may be substituted)
    1/2 lb. fresh mushrooms, washed and sliced
    2 c. light fish stock (hot)
    3 Tbsp. flour
    1 Tbsp. chopped parsley
    1/2 c. grated Gruyere cheese
    paprika
    lemon juice
    salt and pepper
Preparation
    Melt 1 tablespoon butter in saucepan.
    Add onions.
    Cover and cook 3 minutes over low heat.
    Add crabmeat and mushrooms.
    Season to taste.
    Cover and cook 2 to 3 minutes.
    Add fish stock.
    Cook 2 to 3 minutes.
    Then remove crabmeat and mushrooms and set aside. Reserve cooking liquid.
