Sweet Potato Pie - cooking recipe

1 lb. sweet potatoes
3/4 c. sugar
1 tsp. cinnamon
1/2 tsp. nutmeg
pinch of salt
1/2 tsp. vanilla extract
2 drops lemon flavoring
2 eggs, lightly beaten
1 can evaporated milk
pie crust
whipped cream (optional)
Preparation

Boil sweet potatoes until soft. In a large mixing bowl, combine sweet potatoes, sugar cinnamon, nutmeg, a pinch of salt, one-half teaspoons vanilla extract, lemon flavoring, and eggs. Slowly add can of evaporated milk and regular milk and mix well. Pour into pastry-lined pie pan. Cover edge of pie crust with foil. Bake at 375\u00b0 for 25 minutes. Remove foil and bake for 20-25 minutes until knife comes out clean. Serve with whipped cream.
