Zucchini Relish - cooking recipe
Ingredients

12 c. zucchini
4 c. onion
5 Tbsp. salt
2 1/2 c. vinegar
6 c. sugar
1 Tbsp. dry mustard
1/2 tsp. nutmeg
3/4 Tbsp. cornstarch
3/4 tsp. turmeric
1 1/2 tsp. celery salt
1/2 tsp. black pepper
Preparation

Grind zucchini and onion.
Mix with salt and let stand overnight.
Rinse with cold water and drain.
Mix rest of ingredients and cook until they start to thicken (does not get very thick, only less runny).
Add vegetables, mix well and cook slowly 1/2 hour.
Pour in jars and seal.
