Glazed Pork Roast - cooking recipe

Ingredients
    1 (4 to 5 lb.) pork loin roast
    salt and pepper
    2 c. apricot nectar
    2/3 c. firmly packed brown sugar
    2 Tbsp. cornstarch
    2 1/2 tsp. dry mustard
    1 Tbsp. plus 1 tsp. cider vinegar
Preparation
    Score fat on roast in a diamond design.
    Rub salt and pepper into scored slits and over entire surface of roast.
    Place roast, fat side up, on a rack in a shallow roasting pan.
    Insert meat thermometer into thickest part of roast, making sure it does not touch fat or bone.
    Bake at 325\u00b0 for 1 hour and 45 minutes.
