Sauteed Fish Fillets - cooking recipe

Ingredients
    1 1/2 lb. fish fillets (cod, haddock, sole, flounder)
    1/2 c. milk
    1/2 c. wheat germ
    2 shallots, chopped
    1 1/2 Tbsp. cold pressed oil
    2 1/2 Tbsp. butter
    3 Tbsp. parsley, minced
    1 lemon, cut into wedges
Preparation
    Dip fish in
    milk,
    then in wheat germ.
    Saute shallots in oil and butter in
    a
    skillet
    for
    2 minutes, then add the fish. Cook briefly, 3 minutes on one side and 2 on the other. Do\tnot cook
    until
    the
    fish
    is dry and comes apart.
    When serving, toss
    minced
    parsley over.
    Add lemon wedges on the side.\tServes 4.
