Egg Cheese - cooking recipe

Ingredients
    2 qt. whole milk
    1 pt. buttermilk
    6 eggs
    1/2 tsp. salt
    1/2 tsp. sugar
Preparation
    Using a heavy pan, heat milk to near boiling.
    Have eggs beaten until blended well.
    Add buttermilk, salt and sugar.
    Beat again until blended and slowly pour into hot milk, stirring slowly (preferably with a wooden spoon).
    Allow to heat again a few minutes, stirring slowly until it starts to separate (that's the secret).
    When whey starts to form, put in a fine wire strainer to drain.
    After drained, set in refrigerator to chill.
    Serve with bread and syrup or plain with syrup.
