Eggplant Casserole - cooking recipe
Ingredients

1 eggplant
1 c. water
1/2 c. onion
1 c. milk
1 c. cracker crumbs
1/4 c. butter
juice of 1 lemon
1/4 c. bell pepper
1 egg
dash of pepper
Preparation

Peel eggplant and cut in slices.
Dip eggplant in lemon juice. Cook in boiling salty water until tender.
Drain.
Mush eggplant in small pieces.
Add onions and bell pepper.
Beat egg and combine with milk, black pepper and cracker crumbs.
Mix all ingredients together and bake in a greased baking dish at 350\u00b0 for 30 to 40 minutes.
