Ingredients

2 c. potatoes, grated in food processor
1 egg plus 1 egg white, beaten
2 Tbsp. whole wheat pastry flour
1/8 tsp. baking powder
salt and pepper, if desired
onion juice, chopped onion or onion flakes (optional)
Preparation

Mix all ingredients.
Drop by rounded tablespoonfuls and saute until browned.
Often served with warm applesauce.
