Seafood Gumbo - cooking recipe
Ingredients

1/4 c. all-purpose flour
1/4 c. vegetable oil
1 small bell pepper, chopped
2 c. fish stock, chicken broth or diluted clam juice
1 1/2 lb. seafood of choice (shrimp, crab or oysters)
2 (15 oz.) cans tomatoes, cut up
1 1/2 tsp. cajun seasoning
2 stalks celery, chopped
1/4 green onion, chopped

Preparation

Cook flour and oil in a heavy saucepan over medium heat; stir frequently.
When it begins to brown (after 10 to 15 minutes), stir constantly.
When mixture is a deep reddish-brown (after 10 minutes), add bell pepper, celery and onions.
