Arroz Con Pollo(Rice With Chicken) - cooking recipe

Ingredients
    1 (1 1/2 to 2 lb.) pkg. chicken breasts, skin removed
    1 tsp. vegetable oil
    2 c. water
    1 can no salt added stewed tomatoes, chopped (undrained)
    1 c. chopped onion
    2 tsp. chicken bouillon granules
    1 clove garlic, minced
    1 medium size jalapeno pepper, minced or use dry red pepper flakes
    1 tsp. pepper
    1 c. regular rice (uncooked)
    1/4 c. sliced pimiento stuffed olives, drained
    2 Tbsp. lime juice
Preparation
    Rinse chicken with cold water; pat dry.
    Add oil to a 12-inch skillet.
    Add chicken and cook 4 minutes on each side or until browned.
    Remove chicken; drain on paper towels.
    Wipe skillet with a paper towel; coat with Pam cooking spray and add chicken to skillet.
    Combine water and next 6 ingredients; pour over chicken. Cover and cook over medium heat 15 minutes.
    Add rice; cover and cook over medium heat 20 minutes or until tender.
    Remove from heat and stir in olives.
    Sprinkle with lime juice.
