Grandma'S Zucchini Bread - cooking recipe

Ingredients
    3 eggs
    1 1/2 c. sugar
    1 c. vegetable oil
    3 tsp. vanilla
    3 c. flour
    1 tsp. baking powder
    2 tsp. baking soda
    1/2 tsp. salt (optional)
    2 tsp. cinnamon
    2 1/2 c. grated zucchini (unpeeled)
    1 c. chopped nuts
    1 c. raisins
Preparation
    Preheat oven to 350\u00b0.
    Grease 2 loaf pans.
    Beat eggs and sugar together in a large bowl.
    Stir in oil and vanilla.
    Combine flour, baking powder, soda, salt and cinnamon.
    Add to egg mixture; blend well.
    Stir in zucchini, nuts and raisins.
    Pour into greased pans and bake 1 hour.
    Remove and cool on cake rack about 10 minutes before turning out.
    Cuts better when cool. Bread freezes well if wrapped tightly for up to 6 months.
