Walnut Macaroons(Diabetic) - cooking recipe
Ingredients

2 c. quick-cooking rolled oats (uncooked)
2 Tbsp. granulated sugar replacement
1/4 tsp. salt
2 tsp. vanilla extract
1/2 c. liquid shortening
1 egg, well beaten
1/2 c. walnuts, very finely chopped
Preparation

Combine oats, sugar replacement, salt, vanilla and liquid shortening in medium bowl.
Stir to mix well.
Cover and refrigerate overnight.
Add beaten egg and chopped walnuts and stir to blend thoroughly.
Pack onto greased cookie sheet by small amount of cookie mixture (level teaspoonful).
Bake at 350\u00b0 for 15 minutes.
